Aspic is a one-Michelin-star restaurant at 24 Rue Louise-Émilie de la Tour d’Auvergne in the 9th arrondissement, near the Cadet and Anvers neighborhoods south of Montmartre. Chef Quentin Giroud — who left a career in finance to train at the Ferrandi culinary school — serves a single creative, regularly changing tasting menu in an intimate room with only a handful of tables.

## What to expect at Aspic

There’s no à la carte: dinner is a roughly seven-course surprise menu built around carefully sourced ingredients — free-range meat and poultry, line-caught fish from small-boat fishing, and seasonal citrus, herbs, and spices, kept as local as possible. The format is personal and relaxed despite the Michelin star, with the kitchen’s creativity front and center. Aspic serves dinner only, Monday to Friday, and the small size makes advance reservations essential.
