Chef David Toutain has built a reputation for creative, vegetable-forward “surprise” tasting menus that read more like a chef’s diary than a fixed carte. It is one of the most quietly influential fine-dining rooms in Paris.

## What to expect at David Toutain

Diners hand themselves over to the kitchen here: the menus are set and unannounced, built around seasonal produce and the plant world that inspires Toutain’s cooking. His technique brings clarity and precision to ambitious, contemporary dishes, while pastry chef Émilie Gérardi delivers desserts worth the trip on their own. The oak-panelled dining room is intimate and warm, a deliberate contrast to the inventive food. Vegetarian and other dietary menus can be arranged with notice.
