La Table de Colette is a Michelin-listed, eco-responsible gastronomic restaurant in Paris’s 5th arrondissement, at 17 Rue Laplace near the Panthéon in the Latin Quarter. Opened in 2019 by chef Josselin Marie, it puts sustainability and the seasons at the center of refined modern French cooking.

What to expect at La Table de Colette

Brittany-born chef Josselin Marie builds his dishes around vegetables, treating fish or meat as a condiment rather than the centerpiece. The kitchen works almost entirely with seasonal, local producers, and the restaurant goes further than most on sustainability, using green electricity, energy-efficient equipment, and even displaying the carbon footprint of dishes on the menu.
