Bernard Pacaud is the chef at L’Ambroisie. He was born in Lyon, France, and began his culinary career at 16. He has worked at several Michelin-starred restaurants, including Jamin and Taillevent, in his youth.

The extravagant menu, refreshed once per season, comprises only a few dishes. There are no weak selections on the menu, ever. Every dish is a specialty. The menu is quite plain; each meal is defined on a single line, and its ingredients are specified. There is no tasting menu.

The menu at L’Ambroisie features classic French dishes such as foie gras, lobster, black truffle, bresse chicken entrée, and filet mignon. There are also a variety of vegetable-based dishes and desserts. A few of the things we recommend ordering are foie gras, lobster, and filet mignon.

Traditional French cuisine includes frogs’ legs, snails, lobster, veal sweetbreads, and pigeons. These can be found on the menu alongside dishes like the feuillantine of langoustine (Langoustines aux graines de sésame) with sesame and curry sauce.
